Guys…Sweet Potato Nachos is a meal I could have weekly. SO flavorful. It’s fantastic by itself, and last night we paired it with an egg scramble topped with salsa. All of the flavors were so heavenly! <3

Ingredients
  • 6 inch sweet potatoes washed, sliced 1/8-1/4"thick
  • 6 Tbsp. coconut oil melted*
  • 1 1/2 tsp. black pepper
  • 1 1/2 tsp. salt
  • 3 tsp. garlic powder
  • 3 tsp. cumin
  • 1 1/2 tsp. chili powder
  • 1 medium jalapeno seeded
  • 2 avocados diced
  • 1/4 cup small red onion diced
  • 3 roma tomatoes diced
  • 1/2 bunch cilantro chopped
  • 2 14.5 ounce cans black beans drained and rinsed
  • 1/2 cup shredded cheddar cheese (optional, omit if on Reboot)

Instructions
  1. Preheat oven to 450 degrees F.
  2. Place sliced sweet potatoes in a large bowl. Pour coconut oil over potatoes and stir to coat.
  3. Combine black pepper, salt, garlic powder, chili powder, and cumin, in a small bowl. Sprinkle seasonings over sweet potatoes and stir to coat evenly.
  4. Place seasoned sweet potatoes in a cast iron skillet or a sheet pan. Bake in oven for 15-20 minutes.
  5. Immediately sprinkle on cheese. Add remaining toppings.
  6. Serve immediately.
