Spinach Berry Salad with Maple Pecans

Ingredients
Strawberry Poppyseed Dressing
  • 1/3 cup honey
  • 1/3 cup red wine vinegar
  • 1 tsp spicy brown mustard
  • 1/2 cup extra-virgin olive oil
  • 3 large strawberries, stems removed
  • dash of salt
  • 1 Tbsp. poppyseeds
Candied Pecans
  • 1 lb whole raw pecans
  • 1/3 cup maple syrup
  • 2 tsp. cinnamon
Salad
  • 1 bag baby spinach
  • 1 pint strawberries, sliced
  • 1 pint blueberries
  • 1/2 cup crumbled feta cheese
  • 2 cups candied pecans (recipe below)

Instructions
  1. Prepare salad dressing by combining all ingredients except poppy seeds into a blender. Blend until smooth. Stir in poppy seeds. Store in fridge.
  2. To make candied pecans, warm a skillet over medium heat. Spray skillet with grease (like Pam) and add pecans, maple syrup, and cinnamon. Stir to coat. Continue stirring for about 5 minutes until pecans have a light golden color. Remove from heat. lay a piece of wax paper on your counter. Pour pecans onto wax paper and allow to cool and harden.
  3. In a large bowl, add in desired amount of spinach. Top with sliced strawberries, blueberries, feta cheese, candied pecans, and salad dressing.
