Roasted Chickpea Gyros with Cucumber Tzatziki Sauce

Ingredients
  • 1 15 oz canned chickpeas, rinsed and drained
  • 1 tablespoon olive oil
  • 1 tablespoon paprika
  • 1 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (more if you like spicy!)
  • 1/4 teaspoon salt
  • 6 whole grain pita bread
Tzatziki Sauce
  • 1 cup Greek Yogurt
  • 1/2 cup cucumber, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 garlic clove, minced
  • salt and pepper
Toppings:
  • 1/4 red onion, thinly sliced
  • 1 tomato, sliced
  • romaine lettuce, washed and chopped

Instructions
  1. Preheat oven to 400 degrees F (204 C). Gently toss chickpeas with oil, paprika, black pepper, cayenne pepper, and salt. Cook in oven for 20 minutes. Set aside.
  2. In a small bowl, combine the tzatziki sauce ingredients. Set aside.
  3. Spread some tzatziki onto one side of the pita, then add in chickpeas and toppings. Fold pita in half and enjoy!
