6ouncesbrown rice lo mein noodles or noodle of choice (I buy mine at Costco)
1tablespoontoasted sesame oil (and more for drizzling at the end)
3green onions, chopped (separate green parts from white parts)
3cupschopped mixed veggies (such as shredded carrots, edamame, shredded cabbage, red bell pepper, boy choy, broccoli, mushrooms)
Mix 3 Tbsp. Bragg's liquid aminos, 1 tsp. sesame oil, and 1 tsp. maple syrup together in a small bowl. Set aside.
Cook brown rice noodles according to package directions. Set aside.
Heat 1 Tbsp. toasted sesame oil in a medium size skillet over medium heat. Add the vegetables and white parts of green onions to skillet. Saute for 5 minutes until fork tender.
Add the cooked noodles to the skillet and half of the sauce. Stir to combine. Add more sauce as desired. Heat through for 5 more minutes over low heat. Top with green parts of green onion, cashews, and extra sesame oil.
