Quick Veggie-Filled Lo Mein

Ingredients
  • 3 tablespoons braggs liquid aminos (soy sauce)
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon 100% maple syrup
  • 6 ounces brown rice lo mein noodles or noodle of choice (I buy mine at Costco)
  • 1 tablespoon toasted sesame oil (and more for drizzling at the end)
  • 3 green onions, chopped (separate green parts from white parts)
  • 3 cups chopped mixed veggies (such as shredded carrots, edamame, shredded cabbage, red bell pepper, boy choy, broccoli, mushrooms)
  • 1 cup cashews, chopped

Instructions
  1. Mix 3 Tbsp. Bragg's liquid aminos, 1 tsp. sesame oil, and 1 tsp. maple syrup together in a small bowl. Set aside.
  2. Cook brown rice noodles according to package directions. Set aside.
  3. Heat 1 Tbsp. toasted sesame oil in a medium size skillet over medium heat. Add the vegetables and white parts of green onions to skillet. Saute for 5 minutes until fork tender.
  4. Add the cooked noodles to the skillet and half of the sauce. Stir to combine. Add more sauce as desired. Heat through for 5 more minutes over low heat. Top with green parts of green onion, cashews, and extra sesame oil.
