Ingredients
  • Salad:
  • 4-5 cups mixed greens
  • 1/2 cup edamame, cooked and shelled
  • 1/2 cup kidney beans, cooked
  • 1/2 cup chickpeas, cooked
  • 1/4 red onion, sliced
  • Chili Roasted Almonds:
  • 1 cup whole raw almonds
  • 1 TBSP. olive oil
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. chili powder
  • 1/2 tsp. salt

Instructions
  1. Bring a skillet to medium-high heat.
  2. Combine almonds, olive oil, and spices in a bowl.
  3. Sauté spiced almonds for 3-5 minutes, or until browned and fragrant.
  4. Stir frequently so they don’t burn. Popping sounds are just the almonds cracking!
  5. Remove from skillet and cool for a few minutes.
  6. Toss greens, beans, and onion with your favorite “Reboot friendly” dressing. Top with almonds. Enjoy!
