Preheat oven to 375 degrees F.
In a small bowl, add hot water and salt. Stir until dissolved (it doesn't dissolve all the way.) Set aside.
In a metal bowl, add in almonds. Top with salt water and stir to coat evenly. Place almonds in a single layer on baking sheet pan. Place in preheated oven for 8 minutes. Remove from oven and stir thoroughly. Place back in oven for 6-7 minutes just until lightly brown.
Pour hot almonds back in metal bowl. Add olive oil and stir to coat evenly. Add additional salt to desired amount. Spread almonds back out on sheet pan until cooled. Enjoy!
