Healthier Pumpkin Chocolate Chip Muffins

  • 1/2 cup coconut sugar
  • 1/4 cup coconut oil, melted*
  • 2 eggs
  • 3/4 cup canned plain pumpkin
  • 1/4 cup milk of choice
  • 1 1/2 cups white whole wheat flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup semi sweet chocolate chips
  1. Preheat oven to 400 degrees F. Prepare a muffin pan with liners or grease.
  2. Mix sugar, oil, and eggs. Add pumpkin and water. Stir to combine. In a medium bowl, combine flour, baking soda, baking powder, cloves, cinnamon, nutmeg, and salt. Add into the egg mixture. Stir to incorporate. Stir in chocolate chips.
  3. Fill muffin cups 3/4 the way full with batter. Bake in oven for 5 minutes at 400 degrees F. Reduce heat to 350 degrees and bake for an additional 15-18 minutes.
