Ingredients
  • 8 slices 100% whole-wheat bread
  • 1 cup almond milk (or milk of choice)
  • 1 cup vanilla protein powder (or chickpea flour)
  • 1 tsp pure maple syrup
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/4 tsp vanilla extract (optional)
Toppings:
  • sliced bananas
  • raspberries
  • bluberries
  • extra maple syrup

Instructions
  1. Spray skillet with cooking spray while skillet is heating.
  2. Cut bread slices in half.
  3. Whisk almond milk, protein powder, maple syrup, cinnamon, salt, nutmeg, and vanilla extract in a shallow bowl.
  4. Drench a few bread slices in milk mixture with tongs and transfer to the skillet.
  5. Cook for 2-3 minutes, flip over, and cook for 2-3 minutes more.
  6. Reapply cooking spray to the skillet and repeat with remaining slices.
  7. Eat immediately with desired toppings.
