Ingredients
  • 3 medium cheetah-ripe bananas, mashed
  • 1/3 cup extra-virgin olive oil
  • 1 egg
  • 1/2 cup coconut sugar
  • 1 1/2 cups white whole wheat flour
  • 1/3 cup cacao (or cocoa)
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. vanilla extract
  • 1/2 cup dark chocolate chip (I like "Enjoy LIfe" brand)

Instructions
  1. Preheat oven to 350 degrees F.
  2. Line a 12 count muffin pan with muffin liners and set aside.
  3. In a large mixing bowl, combine mashed bananas, oil, and egg.
  4. In a separate medium-size bowl, whisk together the flour, cacao, baking powder, baking soda, and coconut sugar.
  5. Add flour mixture to banana mixture. Don’t over-mix!
  6. Add in vanilla extract. Stir to combine.
  7. Add in chocolate chips just until incorporated.
  8. Spoon batter into muffin tin filling 2/3 the way full.
  9. Bake for 20-25 minutes. Muffins will bounce back on top when done.
  10. Serve warm or at room temperature.
  11. *I like to make a double batch and freeze the other half in a freezer bag.
