- 1/2 cup butter (grass-fed is best), softened to room temperature
- 1/2 cup unrefined coconut sugar
- 1/2 cup pure maple syrup
- 1/2 Tbsp. pure vanilla extract
- 1 large egg
- 2/3 cup 100% peanut butter
- 1 cup 100% white whole wheat flour
- 1/2 tsp. baking soda
- 1 cup oats (old fashion or quick oats)
- 1/2-3/4 cup chocolate chips (I like Enjoy Life brand)
- Preheat oven to 350 degrees F.
- Grease a 8x8 baking dish.
- In a large bowl with an electric mixer, cream together the butter, coconut sugar, maple syrup, and vanilla together for about 4 minutes. Be sure to scrape sides of bowl to combine well.
- Add in peanut butter and beat until combined.
- Add in egg and beat until combined.
- In a separate, small bowl, whisk together the flour, baking soda, and oats. Add to the creamed mixture and mix on low speed until combined.
- Stir in chocolate chips.
- Transfer and spread into prepared baking dish.
- Bake for 25-30 minutes until golden brown. Do not overbake! Cool for 20 minutes and then cut into squares. Enjoy!

Like I’ve said before, I have a weird obsession with anything that has peanut butter in it. Oatmeal is a close second. SO…you can expect to see lots of recipes with it because it’s just what we prefer around here. đ
We had these for the first time last week, made by by daughter, Katie. I’m not going to lie…my kitchen was a mess by the time she was done! Patience or they’ll never learn, right?! I was happy she wanted to make them so I guess it was worth it!
I was unsure how they would turn out since it was a new recipe I’d created, but they turned out perfectly!
What I LOVED about these whole grain, soft bars is how my sweet tooth was completely satisfied without having the refined sugars that most desserts have. Especially while pregnant, I get a headache whenever I have refined sugar (white, brown, powdered, etc.) It’s so weird, and some people might even think it’s a terrible thing, but it’s actually been a blessing because I’ve felt healthier because of it. And believe me, I am not going without sugars. I simply avoid the highest processed sugars and feel SO much better because of it. Everyone in our family does.
I also LOVED eating them warm, dipped in cold milk. Ok…I’m drooling over here now. đ
