I’ve been falling in love with cauliflower rice lately….
Ingredients
- 1 Tbsp. extra-virgin olive oil
- 1-10 oz bag frozen cauliflower rice
- 1-13 oz can black or pinto beans, drained and rinsed
- 2-3 Tbsp. taco seasoning (homemade recipe link below)
- 1 package whole wheat flour tortillas

- With a medium-size skillet over medium heat, add the olive oil until warm. Add in the cauliflower rice and cook over medium heat until soft and warm while stirring often(5-7 minutes).
- Stir in the beans and taco seasoning. Cook for two more minutes until everything is combined and heated through. Remove from heat.
- With the flour tortilla on a plate, add desired amount of cauliflower mixture and then add toppings. Fold up bottom and sides of flour tortilla. Enjoy!
- *Sometimes I add some brown rice to the cauliflower mixture for my kids. Really depends on how much time I have. đ
