BLT Pasta Salad with Creamy Avocado Ranch Dressing

Ingredients
  • 16 oz 100% whole grain rotini pasta
  • 2 cups frozen corn, thawed and drained
  • 2 cups frozen peas, thawed and drained
  • 1 package pre-cooked nitrate-free bacon, crumbled
  • 2 medium tomatoes, diced
  • 3 heads of romaine, washed and chopped
  • 2 cups shredded carrots (from a bag)
  • 1 cup crumbled feta cheese or shredded cheddar cheese
  • Creamy Avocado Ranch Dressing (see recipe link below)
Servings:
Instructions
  1. Cook Pasta according to package directions. Set aside. Meanwhile, combine all other ingredients except dressing into a large bowl. Once pasta has cooled down, combine with salad.
  2. Top salad with as much creamy avocado ranch dressing as desired.
