Ingredients
  • 6 medium baking apples, such as Granny Smith (2 1/2 to 3 pounds)
  • 1 orange, zested and juiced
  • 1/8 cup Brown Sugar
  • 1/8 cup honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground turmeric
  • 2 scoops SeedFiber (optional)
  • dash dash of ginger
  • 1/4 cup shelled hemp hearts
  • 1/8 cup ground flax seeds
  • 1/4 cup sliced almonds
  • 4 scoops Vanilla Protein Powder
  • 3/4 cup old fashioned rolled oats
  • 1/8 cup Brown Sugar
  • 1/2 cup coconut oil, melted (more if needed)
  • 1/8 teaspoon kosher salt

Instructions
  1. FILLING:
  2. Heat oven to 350 degrees F.
  3. Grease baking dish. Core apples then cut into 3/4-inch pieces.
  4. Add apples to a large bowl with orange zest, orange juice, sugar, honey, cinnamon, nutmeg, turmeric, SeedFiber, and ginger.
  5. Stir, then add to baking dish.
  6. TOPPING:
  7. Combine protein powder, oats, hemp hearts, flax seeds, sliced almonds, sugar, and salt in a medium bowl.
  8. Add the melted coconut oil & stir until all the topping has been moistened and is crumbly.
  9. Add additional coconut oil if topping does not stick together into clumps.
  10. Sprinkle over apple filling.
  11. Bake for 1 hour to 1h and 30min or until juices are thickened, apples are tender and topping has turned light golden brown.
  12. If the topping starts to become too brown, cover with aluminum foil and continue to bake until the apples are done.
