Ingredients
  • 1 lb. stew meat*
  • 4 cups water or beef broth* (I’ve done both and both are delicious)
  • 2 Tbsp. Worcestershire sauce (optional)
  • 2 Tbsp. Bragg Liquid Aminos (natural soy sauce)
  • 4 cloves garlic, minced
  • 4 Tbsp. tomato paste
  • 2 tsp. dried roasemary
  • 2 tsp. dried thyme
  • 1-1/2 cups chopped onion (I use frozen)
  • 6-8 whole carrots, chopped
  • 5 stalks celery, chopped*
  • 7 small yellow potatoes, chopped
  • 1 Tbsp. salt
  • 1 tsp. black pepper

Instructions
  1. Heat 1 Tbsp. olive oil in Instant Pot over the saute setting. Brown the meat on all sides.
  2. Add in the water, Worcestershire sauce, liquid aminos, garlic, tomato paste, rosemary, and thyme. Stir to combine.
  3. Add remaining ingredients and stir to incorporate.
  4. Close the lid on the Instant pot with the steam valve shut. Press the meat/stew setting or manually cook for 35 minutes at high pressure. Allow pressure to naturally release. But, if time won’t allow, release the steam and it will still turn out well.
  5. Carefully open the lid and give the stew a good stir. Adjust salt and pepper levels if necessary.
