This recipe was the first time I’d ever used creole seasoning and I fell in love with it. The beans are a perfect compliment to the quinoa and are very filling!

Ingredients
  • 1 lb. organic cooked chicken breast, diced (or 2 cups shredded rotisserie chicken)*
  • 1 red bell pepper*, diced
  • 5 stalks celery, diced
  • 1/2 medium onion, chopped
  • 4 garlic cloves, minced
  • 1 Tbsp. coconut oil (or butter)*
  • 3-3/4 cups chicken broth* or water
  • 3 Tbsp. dried parsely (by mistake we once put in oregano and it was delicious too.)
  • 2 tsp. creole seasoning
  • 1-1/2 tsp. ground sage
  • 1-1/2 cups quinoa
  • 1-2 15 oz. cans red kidney beans, drained and rinsed (depending on how many beans you'd like)
Servings:
Instructions
  1. Place chicken, bell pepper, celery, onion, garlic, oil, and 3/4 broth into a large skillet that has a tight fitting lid. Cook over medium heat until the vegetables are tender (3-5 minutes).
  2. Add the seasonings, quinoa, and remaining 3 cups of broth to the skillet. Quickly bring to a boil, then immediately turn heat to low. Cover the skillet and simmer for 15 minutes.
  3. Once the quinoa is cooked and fluffy, add the beans, and toss everything together in the skillet.
Recipe Notes

This is delicious in lettuce wraps or by itself!
