Need a real-food dessert to bring to a party? These are ALWAYS a hit at parties because because they are just THAT GOOD! They’re a staple dessert in our home and both of my older kids can make them all by themselves because it’s a no-bake, no fuss (I didn’t say no mess 😉 ) recipe. This recipe is also a perfect way to get kids in the kitchen…kids are much more compliant to cook when it’s something they can’t wait to get their mouths on!

I love how these are made with all clean, unprocessed ingredients…and have I told you how much our family LOVES peanut butter? We love it to the point of weakness, but I can’t complain about our love affair because peanuts are a legume made in the dirt of our earth. I’m much happier to have it be that than a factory engineering and manufacturing processed, health-deteriorating foods. Any other peanut butter lovers out there??? It’s really a miracle to me how my daughter Katie, 8, no longer has a peanut allergy! I didn’t know people with peanut allergies can become a recovered peanut allergic person. 😉

Healthy No-Bake Peanut Butter Protein Bites

1/2 cup 100% peanut butter*

1/2 cup honey*

1 tsp. vanilla extract*

1/4 cup unsweetened coconut flakes

1/4 cup ground flax seed meal*

1 1/2 cups old-fashion oats (minute oats work too!)*

1/2 cup brown rice puff cereal

1/4 cup mini chocolate chips or raisins

In a large bowl, cream together the honey and peanut butter. Add in each additional item one-by-one stirring to incorporate after each. This will be thick and sticky!
Freeze for 10-20 minutes until chilled to help form balls.
With a small-medium ice cream scoop, scoop out about 20 balls. Roll into balls.
Store in an airtight container in the fridge. They are fine on the counter too, but we like them slightly chilled. 🙂
